A little birdie told me you’d like this recipe 🐥 This ‘birdseed slice’ will have you feeling as happy as a lark.
The world of snacks can be so confusing… it seems like the things we all thought were good snacks when we were young are no longer viable options to feel our best later in life.
But it doesn’t mean we have to only eat things that we don’t like the taste of.
Sure, we need a good balance of ingredients to stay satisfied and get our natural daily vitamin intake… still we want it to taste delicious, obviously.
Believe me, you’ve got yummy flavors in this recipe.
So what makes this slice so healthy, too?
It contains sesame and pumpkin seeds which are calcium-rich and packed with healthy fats, magnesium and zinc.
Nuts and seeds have an abundance of antioxidants which dampen the growth of cancer cells and are naturally anti-inflammatory.
Dried apricots and cranberries have iron, vitamin A and fibre which all make you feel as good as they taste.

Birdseed Slice
1 cup pumpkin seeds
1 cup sesame seeds
2 tablespoons coconut oil
3 tablespoons golden syrup
½ cup brown sugar
½ cup chopped apricots
½ cup dried cranberries
½ cup roasted almonds nuts (roughly chopped)*
*Avoiding nuts? Feel free to eliminate them for allergy safety.
Method
Place seeds on a baking sheet lined with non-stick baking paper. Toast under the grill carefully for about 3-4 minutes. Pour into a mixing bowl.
Place coconut oil, golden syrup and brown sugar in a non-stick pan. Heat until spread and sugar have dissolved. Increase the heat to high and heat for 3 more minutes until the mixture is bubbling and begins to thicken.
Pour hot syrup mixture into a bowl with seeds, fruit and nuts. Mix together then lightly press into a slice tray lined with baking paper. Cut while semi-hot, before it sets completely and place in a glass container in the fridge and enjoy!
It’s super easy to make and can be stored in the fridge for up to 5 days, if there’s any left! And yes, you can freeze them too.
