Have Your Chocolate Cake and ‘Easter It’ Too!
Why do all holidays have such delicious treats?
🐣 Easter is synonymous with chocolate. Chocolate bunnies, eggs, and well, anything yummy you can share.
The great news is that indulging in a little chocolate has great effects for you.
In fact, you can consume 25 - 50 grams every single day of good chocolate if you’d like. As long as you’re eating these sweet treats made of good quality ingredients.
Don’t worry, I have you covered with a healthy chocolate cake that anyone you share it with will enjoy. They won’t even be able to guess what’s inside!
Bean Chocolate Cake Recipe
INGREDIENTS:
• 420g can of certified organic kidney/borlotti beans, drained
• 1 tablespoon vanilla extract
• 5eggs
• 1⁄2 cup EVO
• 1 cup raw sugar
• 65g cocoa powder
• 1 tablespoon espresso coffee
• 1⁄4 teaspoon Himalayan salt
• 1 teaspoon gluten-free baking powder
• 1⁄2 teaspoon baking soda
METHOD:
Preheat the oven to 180°C.
In a food processor, puree the beans, coffee, vanilla and one egg until smooth. Set aside. In a separate bowl, combine the oil and sugar, processing until well-blended.
Add the remaining eggs to the oil and sugar mixture, one at a time, mixing after each addition.
Add the bean mixture, then the sifted cocoa powder, salt, baking powder and bicarbonate of soda, processing until mixed thoroughly and smooth.
Pour the batter into a 22-centimetre greased round cake tin.
Bake for about 40-50 minutes.
Leave the cake to cool in the tin before removing from tin. Enjoy!
