Cauliflower Tortillas
Who doesn’t love a good wrap, burrito, or taco? Crazy people, that’s who.
Since the beginning of time, humans have always wrapped their food in something. It helps us keep delicious ingredients together. It soaks up some of the flavour and makes eating more fun!
Commercially created tortillas are a great shortcut to making your own, but they can still have ingredients that inflame your gut, which eventually leads to systemic inflammation.
Maybe the one step you can take to a healthier you is switching to these super yummy, homemade cauliflower tortillas! Great for those who are gluten intolerant.
Ingredients:
1 medium cauliflower
1 small onion
2 large eggs
1 tsp of olive oil
1 tsp of fresh lemon juice
1 tsp of coriander chopped
Salt and pepper to taste
Method:
Cut the cauliflower into florets and steam for 10 minutes, until tender.
When cooled chop the cauliflower to resemble rice or place it in a food processor.
Place ½ tablespoon olive oil in a frying pan and add onion and cauliflower and gently fry until tender and remove from heat.
Crack the eggs into a mixing bowl with a pinch of sea salt and black pepper and add the other ingredients (cauliflower, lemon, coriander, and onion).
Heat 1 tablespoon olive oil in a frying pan and add enough mixture to form a pancake.
Cook the tortilla for about 5 minutes on each side; rotate carefully using a skimmer.
Transfer to a platter and serve hot or at room temperature. You can add anything on top of these tortillas.
